Although Jay Leno doesn't like vegetables, Jack told him: "Eat them anyway."
- 1 tablespoon olive oil
- 3 crushed garlic cloves
- 1/2 cup chopped onions
- 1/2 cup chopped carrots
- 1/2 cup flour (seasoned with salt and pepper)
- 1 1/4 pound rib-eye roast cubed to bite-sized pieces
- 3/4 cup beef broth
- 1/2 cup chopped tomatoes (drained, if canned)
- 2 teaspoon sugar
- 1/2 teaspoon thyme
- 1/2 cup frozen peas
- Salt and pepper to taste
In a saucepan, add olive oil, crushed garlic, onion and carrots; saute until almost tender.
Add cubed meat that has been rolled in seasoned flour. Cook until browned.
Add beef broth, chopped tomatoes, sugar and thyme. Mix well.
Cover and simmer 25 to 30 minutes.
Add frozen peas, stir well.
Salt and pepper to taste
Scoop meat mixture into bottom of pie pan. Scoop garlic mashed potatoes on top. Use spatula to make potato layer smooth.
Bake in 375 degree oven for 15 minutes
Broil top 5 minutes to brown top of potatoes
Let cool, slice and enjoy!
