1st Course
One piece each of these three:
• Scallop sushi or sashimi
• Halibut or Red Snapper - to show the soft white wine
• Yellowtail - to show the richer white wine

2nd Course
Salmon Carpaccio
thinly sliced salmon, green onions, chili powder,
ponzu, olive oil

3rd Course
Freeway Roll
albacore, spicy tuna, Tataki sauce, on California roll

4th Course
Green Tea Crème Brulee
